Raise a sparkling toast at Saint Pierre
On Saturday afternoon: For the month of December, a divine collaboration between two-Michelin-starred restaurant Saint Pierre and Maison Collery Champagne is setting the tone for the ultimate festive indulgence. By way of an exclusive curated pairing, a special lunch menu will see chef-owner Emmanuel Stroobant plating up the freshest produce to go hand-in-hand with Maison Collery’s Grand Cru offerings. One of which is a winning bubbly from the recent Decanter World Wine Awards’ Best in Show—the Champagne Collery Blanc de Blancs Grand Cru NV, sparking a well-rounded finish with fresh citrus notes. This is a sip that goes perfectly with the dollop of Oscietra Caviar atop a house-smoked Ora King salmon, as well as the next course—the Brittany Blue Lobster, steeped in an aromatic curry-scented rouille and saffron shellfish consommé. The underdog of the meal, however, was the Maison Collery Rosé Brut Grand Cru NV, boasting a sweet tempered profile of piquant nuances of rhubarb, blood orange and lemon. This scene-stealer matched harmoniously with Saint Pierre’s dessert, plated with fresh Japanese strawberries and candied Korean chestnuts over a decorated base of vanilla sable disc and strawberry compote.
The Maison Collery Champagne lunch menu at Saint Pierre will be available in the month of December, excluding 24th and 31st December. Saint Pierre, 1 Fullerton Road, #02-02B One Fullerton, Singapore 049213

Explore Asian delicacies with Path’s Expedition menu
On Saturday night: Path’s newest eight-course Expedition menu is a culinary odyssey where familiar East Asian flavours are explored through innovative lens, rooted in classic French finesse. Path continues its efforts in minimising its carbon footprint, with much of the seafood presented in the menu procured from the bountiful straits surrounding Singapore, Malaysia and Indonesia. Each course unveils household dishes in a new, meticulously-crafted light, paying attention to balance and blend of flavour.
Consider the Sea Cucumber, where tiger whelk and hand-dived sea cucumber are complemented with an array of savoury condiments, an ode to the delicacy and comfort of Teochew porridge. Baby lotus roots pickled in vinegar and house-made chicken stock add richness and depth, while the daikon and star fruit slices provide a light zing to the dish. Another notable dish is the hearty Shanghainese hairy crab roe. Reminiscent of local tau huay, the rich umami of hairy crab is sauteéd and laid on a bed of silky smooth soy curd, topped with crispy rice and tempura tuile for texture. Dessert ends on a sweet, simple note featuring persimmon. An overripe fruit is frozen, peeled and thawed to become a luscious jelly bursting with saccharine juice. Torched with Okinawan brown sugar, the menu ends on a citrusy bite laced with tart notes.

Be immersed in ‘Ho Tzu Nyen: Time & the Tiger’ at Singapore Art Museum
On Sunday afternoon: Dive into a groundbreaking showcase of multifaceted works by acclaimed Singaporean artist Ho Tzu Nyen. Featuring eight major installations, the exhibition centres around the primary sources of Ho’s work—the tiger, its region-wide fascination and how they act as a point of reflection on the idea of time. Here, a myriad of works spanning video installations, theatrical performances and soundscapes engage with identities and stories of the past to investigate the construction of history and the narrative of myths. Time & the Tiger is entirely immersive in experience, as the artist invites the audience on a journey to explore time as a multi-dimensional matrix shaped by cultural and historical complexities through the powerful emblem of the tiger.
Ho’s latest work, T for Time, is a layered installation that reflects on experiences of time. This commission is presented in two parts. The former acts as an archive, featuring 40 screens as a medium to demonstrate the concepts of time. The latter is a two-channel video installation, where Ho utilises algorithms to edit video clips in real time, depicting ideologies and consciousness of time.
Ho Tzu Nyen: Time & the Tiger runs from 24 November 2023 to 3 March 2024.

Take your pick of Singaporean delights such as dry laksa, beef rendang, ngor hiang and garam assam fish. The restaurant’s dessert selection is a feast for the mouth and eyes, as Violet Oon reimagines Christmas classics with local flavours. Think a coconut-infused log, tropical fruit cake and rum-infused butter cake reminiscent of delectable gula melaka pengat. For a thoughtful gift, the Noel Gift Box will do the trick. Mix and match cookies and jams of your choice from a selection of tropical flavours like guava, calamansi and gula melaka coconut crunch. Discover vegetable gastronomy at Restaurant JAG’s new space
On Friday night: Restaurant JAG’s new space is an apt reflection of the Michelin-starred restaurant’s ethos. Surrounded by greenery and bathed in natural light, it takes up the second floor of a beautifully restored 19th-century warehouse and is filled with specially commissioned art. Here, edible botany is explored with La Balade du Végétal—or The Vegetable Journey, the restaurant’s exquisite vegetable-centric menu. The Autumn menu explores the immense potential of fall produce from France and Italy, including unique items such as celtuce, rutabaga and chayote.
Jerusalem artichoke, for instance, is presented in five ways: raw, braised, pickled, in a tuile, and as sand. Each comes together to form a wonderfully cohesive dish full of textures and bursting with flavour—paired with Scottish blue lobster to complete the plate. The celeriac dish, too, is a standout. With utmost creativity, the root vegetable is prepared in a torsade, pickled and in a puree, with beautifully cooked venison to accompany the plant. By the time dessert rolls around (a cheese trolley and three distinctly different courses to end the night on a sweet note) you’ll find yourself seeing vegetable gastronomy in an entirely different light.

Catch The Ballad of Songbirds and Snakes
On Sunday night: When The Ballad of Songbirds and Snakes begins, the arena where the Hunger Games is supposed to be held is little more than a stadium—entirely unlike the deadly battlegrounds we are familiar with in Suzanne Collins’s original trilogy. It is the 10th iteration of the Games, 64 years before Katniss Everdeen will come into play, and a young Coriolanus Snow—future president of Panem—is assigned to be part of the first batch of mentors. His assigned tribute: District 12’s Lucy Gray Baird, who shocks the people of Panem when she slips a snake into the clothing of the mayor’s cruel daughter and begins to sing defiantly on stage at the reaping ceremony. What’s most fascinating, then, is watching how the Hunger Games evolve into the spectacle that we know it to br—with every decision made here echoing through the years to shape both the Games and Snow himself in haunting ways.
The Ballad of Songbirds and Snakes is in cinemas now.

Groove to Dua Lipa’s latest single
On Friday night: Trust the pop songstress to take your weekend up a notch with her imminent new single. This comes after a series of cryptic teasers posted on the singer’s socials that were quickly scrapped in the blink of an eye–a nod to the title, taken after illusionist Harry Houdini. Just gauging from the teaser alone, Dua Lipa’s ‘Houdini’ is a bright and bold groove, marked by an upbeat tempo of hypnotising synths and funky electro beats. Following her chart-hit ‘Dance The Night’ for the Barbie soundtrack earlier this year, we expect nothing less from the disco pop majesty herself.

Dig into the diverse wood-fired offerings at Butcher’s Block
On Saturday night: Spearheaded by Hawaiian chef Jordan Keao, the culinary vision of Butcher Block pays ode to longstanding native traditions of cooking with wood-fire; where local flavours and a sea of influences come into play. As its name explicitly suggests, Butcher’s Block apportions most of its efforts to the butchery of meats—with a zero-waste vision in place.
You’ll catch a semblance of this right at the entrance of the restaurant, with a glorious display of the current cuts of meat (of beef, duck, pork, fish and lamb) suspended from above. From the butchering to dry-ageing the produce for a longer purpose, everything is done in-house. The new IMUA menu, which means ‘moving forward with strength and spirit’ in Hawaiian, features the restaurant’s starry highlights. The lauded local staple, poké reclaims itself—sans any traces of pineapple—through smoked hamachi cubes aged with housemate ponzu and served alongside puffed rice and an earthy blend of seaweed foam and herb dashi. Chef Keao also made sure to honour his country’s locally grown produce like tropical fruits, as he paired a frothy starfruit curd with likes of a grilled Japanese mackerel. What made the dish come to life however, was the tangy achar paste served on the side, made out of red chili, candlenut, shallots and a distinct rainbow swiss chard from France.
But what we’ll be pining for? The signature Dry-aged Duck, first cooked in ambient heat for five hours before going on the grill till the meat is delectably smoky and skin is crisp. Duck tongue serves as a “garnish” of sorts atop, first brined, then braised and deep-fried. Making sure no part of the animal goes to waste, on the the plate there’s a pan-seared dumpling concealing a mix of crispy duck skin and minced duck meat as well as duck jus rendered from the carcass and seasoned with a sweet vintage madeira. A dish that’s too, available to order should you choose to go à la carte.

Indulge in The Astor Grill’s newly-expanded menu
On Sunday night: Following the success of its three-month pop-up, The Astor Grill is now a permanent fixture at The St. Regis Singapore. With over 20 years of experience in the art of grilling, new chef de cuisine Angelo Sergio assembles an extraordinary selection of bone-in, dry aged and shell loin cuts—each prepared on a custom-built parrilla grill with charcoal and vulcan stones for nuanced smokiness and a lightly charred crust. Most notable on the menu is the Full Blood Autumn Wagyu, beautifully tender with rich buttery flavours. The Bone-in New York Striploin is also outstanding, a crossbreed wagyu from Australia and Japan integrating the best traits of each region. This is a steakhouse that clearly knows their beef well—but their non-steak options are impressive as well. The Grilled Spanish Octopus with chorizo chickpea puree and semi-dried tomatoes is a highlight, as is the Grilled US Kurobuta Pork Chop. To end your meal, go for the Baked Alaska. Italian meringue conceals a delightful medley of pistachio gelato, raspberry sorbet and chocolate sponge, making for a wonderfully refreshing sweet treat.

Experience the timeless magic of Abba’s greatest hits in Mamma Mia!
On Saturday afternoon: It’s impossible not to have a good time at Mamma Mia!. Set to Abba’s catchiest hits, the jukebox musical is two hours of unadulterated, exuberant joy—with infectious beats, glitzy costumes and energetic choreography transporting audiences to the fictional Greek holiday island of Kalokairi. Here, we meet 20-year-old Sophie Sheridan in the lead-up to her wedding. Wanting to be walked down the aisle by her father, she invites three of her mother’s former lovers to the ceremony in hopes of figuring out his identity—unbeknownst, of course, to the free-spirited Donna Sheridan (played by Sara Poyzer).
Jess Michelmore shines as Sophie, capturing both her youthful optimism and her endearing playfulness with a beautifully expressive voice. But what truly brings the show together is the stellar chemistry between the cast. There’s plenty of laughter to be had whenever Donna and the Dynamos take the stage together, and even more anytime Pepper and the guys make an appearance. Amid moments of chaotic hilarity and rousing renditions of Abba classics, it is the mother-daughter relationship between Donna and Sophie that gives Mamma Mia! its heart—such that Poyzer’s tender performance of ‘Slipping Through My Fingers’ in a moment alone with Sophie before the wedding stuns just as much as the impressive full-scale choreography of ‘Voulez-Vous’.
Mamma Mia! runs until 5 November 2023.

While concepts like parallel universes and interdimensional travel have gained popularity over the years, the exhibition traces how these ideas have long been found at the heart of Asian spirituality. Head bartender Kazuhiro Chii helms the bar with an intuitive ability to personalise his service according to each guest’s mood—whether it’s a friendly chat over the counter that you seek, or the solitude of a quiet nightcap. His masterful artistry arises from technical precision and a deep respect for tradition and form, cultivated over more than two decades behind the bar.
The signature Fresh Fruit Cocktail is an undeniable highlight here. Choose from a selection of the season’s finest Japanese fruits—we recommend the peaches if they’re available—which Chii then uses to create a delightfully refreshing tipple. Another unique standout is the Yamaoroshi, a smooth, creamy libation of wasabi-infused gin, cacao liqueur and freshly grated wasabi. If you find yourself feeling peckish halfway through the night, a carefully curated menu of elevated Japanese snacks pairs superbly with Chii’s cocktails. You’ll find what is possibly one of the best renditions of Japanese curry rice in Singapore in the Mini Miyazaki Wagyu Curry Rice, while the Toro Katsu features tender cuts of fresh otoro coated in a special charcoal-infused panko then deep-fried to wonderfully crisp perfection.

A four-hands collaboration between chef Carlos Gan of Boeuf and chef-owner Mohamed Al-Matin of Le Matin Patisserie, this all-day menu is deeply evocative of the respective concepts’ signature flavours. Best suited for two, the decadent Burratina di Puglia and Wagyu Tartare topped with a herb-infused yolk and lumpfish caviar eases your palate; unfurling into abundant notes of umami and a subtle sweet aftertaste. The crème de la crème of this course is the Filet Mignon Rossini—densely marbled Australian tenderloin is nestled between a slab of luxuriously seared foie gras and laminated brioche feuilletée, topped with a drizzle of spiced pepper jus. For a spellbinding finale to your meal here, every spoonful of the Fromage de Vos Reves and Moelleux au Chocolat is a comforting reminder of why you save the best for last.

Tuck into the new seafood offerings at Cut by Wolfgang Puck
On Saturday night: The one-Michelin star restaurant in Marina Bay Sands has long been lauded for its fine cuts of steak, but its fresh seafood dishes stole the show during our last visit. Their venture into seafood is “an evolution”, explains Chef Wolfgang Puck. and is a showcase of how they are “continuously looking for ways to celebrate great cuisine and service”. The first change you’ll notice in the restaurant is a custom-built installation, which features a brilliant display of oceanic treasures such as sustainably-sourced oysters from New Zealand and razor clams from Scotland. Call for the refined wagyu tartare or the grilled jumbo prawns, laced with Argentinean chimichurri, brown butter and lemon for a rich flavour bomb. These are wonderful accompaniments to your steak, which you may still indulge in. What could stand on its own, however, and the biggest surprise of the meal, is the porridge-like dish of Binchotan-grilled jade abalone, razor clam, uni, guanciale, bonito butter and chives. Its comforting charm will not be lost on most, superbly refined through its excellent use of ingredients—and delivers a perfectly salty, buttery taste that is deeply welcome.

Discover Hanazen’s new omakase menu
On Sunday night: Treat yourself to an indulgent, comforting omakase at Hanazen. A refreshed 10-course menu awaits you, each one a showcase of Michelin-starred chef Taisei Iwao’s French culinary sensibilities inflected with Japanese precision. The opening dish exemplifies this; a crisp Uni Brioche topped generously with Murasaki uni making for a playful meld of cream and spice. The star of the night is resolutely the abalone served with rice, drizzled with a deeply complex koshihikari liver sauce that sweetens every spoonful. A close second would be the unassuming Beef Curry, where wonderful simplicity is derived from a bowl of braised beef, slow-cooked with sweet Japanese fruits and served with rice. If you are partial to the dessert course, await the lightness of the Peach Soup, which sees a scoop of celery ice cream paired with fresh Yamanashi peaches beneath.

Indulge in an elevated meal of tempura at Tentsuru
On Sunday afternoon: Fine dining tempura is an art form of its own. Master Chef Daiki Kawaguchi’s light batter consists of a unique blend of three different flours from Hokkaido, which delivers a non-greasy, clean crunch to this tempura. Watching Kawaguchi dip fresh seafood into hot oil for a precise amount of time, then plate it up delicately over the counter is a mesmerising experience. Kurumaebi, a rich, sweet tiger prawn served with its head and paired with pink salt or lemon juice, is cloaked in sophistication with every bite. Other masterpieces include the scallop, Miyazaki beef sirloin and Satsumaimo (sweet potato), complementing each other with varied flavours and tender textures. With each morsel, Chef Kawaguchi recommends a sauce for you to pair it with. To finish, you can select between Tendon and Tencha—a final showdown of tempura served on top of either fluffy white rice or porridge—which rounds out your meal beautifully.

Sip on cocktails at rooftop bar Las Palmas
On Saturday night: Pastel-hued furnishings and a poolside view transforms Las Palmas into the tropical desert oasis of California’s Palm Springs. Situated on the 33rd floor of Courtyard by Marriott Singapore Novena, the rooftop bar’s outdoor deck lends itself to a weekend of lounging by the pool with a drink in hand, whilst its indoor space—with its fluted oak timber walls, blue terrazzo floor and pink stone quartz countertop—evokes the glamour of Hollywood’s Golden Age for a chic night out.
The bar’s menu, too, takes inspiration from the famous desert city—offering innovative cocktails and dishes inspired by the stories, films and locations of Palm Springs. Take the bar’s signature Rose Bowl cocktail for instance, named after the city’s iconic stadium. Crafted with London dry gin, framboise, citrus, rose and lemon thyme, it makes for a light and refreshing tipple to start the evening. We also recommend the Big Trouble in Little China, with Chinese gin, raspberry and citrus. The cocktail’s true strength, however, lies in the mala seasoning added, giving it a hint of spice that makes it all the more satisfying. For a special treat, make a booking for one of the bar’s pastel pink poolside cabanas—a picture-worthy hideaway perfectly positioned for a quick dip in the water and a view of the setting sun.

Indulge in innovative plant-based brunch fare at Back to Eden
On Saturday afternoon: At Back to Eden, cutting animal products out of the menu is in no way a downside—but rather an invitation to be innovative with plant-based ingredients. The newest kid on the block in Singapore’s growing plant-based dining scene, the cafe puts a unique twist on classic brunch staples.
Start your meal with the Holy Chips, delicate layers of deep-fried lotus root tossed in savoury house-made mala powder. Addictively crisp, they come served with Lao Gan Ma mayo dip on the side for a satisfying fiery kick. Also go for the Oyster Mushroom Berempah, coated in a flavourful mix of herbs and spices then deep-fried with curry leaves. An herbaceous lime mayo dip balances the dish with light tanginess, cutting through the heavier flavours on the plate. On the mains front, try the Crispy Potato Rosti. Cooked to golden-brown perfection, it comes with creamed spinach and a pesto-topped roasted tomato. And to complete your dining experience, pair your meal with one of the cafe’s refreshing smoothies. We recommend Purple, a delightful concoction of blackberries, blueberries and frozen bananas. A dash of cinnamon provides the final touch, adding an aromatic layer to the drink that makes it a definite highlight.

Discover Italian open-fire grill with Griglia’s refreshed menu
On Friday night: Griglia sets itself apart from other Italian restaurants with its unique focus on open-fire grill—inspired by grigliata, an Italian summertime barbeque tradition. Step through its doors and you’ll find a space that is both elegant and rustic, with plush leather seats against charming brick walls. A convivial atmosphere fills the room, as a refreshed menu by Napoli-native executive chef Andrea De Paola delivers authentic Italian flavours enhanced by the smoky char of the grill.

Smoked Eel sits atop a buttery brioche bun topped with a burst of trout roe, while Marinated Olives come steeped in Martini vermouth and aromatic Italian herbs with a hint of Calabrese chilli for a fiery kick. Beloved signature items also remain on the menu, such as the Hokkaido Scallops Crudo with grilled white corn and Saffron Rice with sicilian red prawn and amalfi lemon. When it comes to the mains, the Whole Mediterranean Seabass is a highlight, seasoned simply to allow its flavour to shine through, then cooked over open fire. The Suckling Pig Porchetta is also a standout, slow-cooked over the grill for hours to achieve what might be one of the most tender renditions of pork roast you’ll ever have. To finish, go for the Cappuccinomisu, the restaurant’s interpretation of a tiramisu woven with an Italian cappuccino. Decadent buffalo mascarpone infused with port wine comes topped with a fluffy cappuccino foam, making for the perfect sweet treat to end the night.

Pick up a copy of Kirsten Han’s The Singapore I Recognise
On Friday night: In The Singapore I Recognise, activist and journalist Kirsten Han paints a heartfelt portrait of our home country and the people who live in it—many of whom go unseen and unheard. Through researched interviews and personal reflections, she unveils aspects of our country that don’t follow the conventional narrative most have come to recognise as the Singapore story. Examining civil society’s experiences of Singapore, she offers a hopeful way forward by considering the communities that are already moving towards communal care, solidarity and empowerment. As we celebrate our nation’s birthday this week, The Singapore I Recognise is a poignant—and much-needed—portrayal of home.

Indulge in a National Day special from Caviar Colony x Sunday Folks
On Saturday night: What happens when the world’s most indulgent roe meets the sweet swirl of ice cream? Some might call it a risky dance but here, we call the unlikely collaboration between local brands Caviar Colony and Sunday Folks a total game changer. A glorious by-product of tedious research and development featuring Russian Hybrid caviar, the result is every bit indulgent as one would expect—with two creations that delicately straddle the best of both worlds.
The first, comes in a handy classic cone: filed with two scoops of Caviar Colony x Sunday Folks ice cream—enveloped with copious dollops of the salt-cured roe and bearing a hint of rosemary—then topped with even more caviar, alongside a savoury cheddar cheese chip. But if we had to choose the real initiation into the uncharted waters of caviar ice cream, it would be sitting in a heavy ceramic bowl—joined by cold piped mash potato “strings”. In this special dessert bowl, comes an additional 10g tin of Caviar Colony Russian Hybrid Caviar to savour as you wish. A deft pairing of sweet and savoury, as the heavy brine from the cheese chip completes the rich and complex spoonful. Be sure to definitely share this decadent treat with a fellow caviar fan.
Available only from 1 August to 13 August 2023 at Sunday Folks’ ION Orchard outlet, with limited quantities daily. Pre-book your dine-in slot here.

Tantalise the senses with Peruvian street food fare at Canchita’s Peruvian Street Food Fiesta
On Sunday afternoon: A slice of Peru has arrived back home, as Canchita’s chefs Daniel and Tamara Chavez launch Singapore’s very first Peruvian Street Food Fiesta for all to enjoy. Tantalise the senses with bold, textural flavours and fragrant aromas of authentic Peruvian street fare. Start off with the simplicity of the Maiz, Papaz & Salsas Andinas sharing platter, where sweet corn blooms into something unexpected when paired with traditional Peruvian sauces. When it comes to mains, the Ceviche Carretilla is not to be missed—tender red snapper seasoned with plenty of tang and kick, then juxtaposed with the satisfying crunch of calamari. Follow with the hearty Papa Rellena, a homemade potato croquette stuffed with a creamy filling of beef stew and organic eggs. No meal is complete without dessert and the Arroz Zambito is one you’ll want to return for, as cold Peruvian rice and pudding is layered with a sweet chancaca sauce, and topped with freshly grated coconut.

Spice up your date night at Ms. Maria & Mr. Singh
On Saturday night: There’s nothing subtle about the medley of flavours that await at Ms. Maria & Mr. Singh—considering the Mexican-Italian restaurant is the brainchild of kooky celebrity chef Gaggan Anand. And if you’re on a sojourn to tackle some of the restaurant’s greatest hits, alongside new additions, your best bet would be their latest degustation menu.
The à la carte option still remains for diners who prefer to eat at their own pace—with the freedom of choice. Start with the restaurant signature, cheekily named Love At First Bite, this papdi chaat snack is a one-bite mouthful, where a chaat masala yoghurt amalgamation is concealed in a crisp sphere. Another Indian street snack classic is interpreted in the form of deep-fried airy golgappa pillows, sealed with a sweet blend of Hokkaido white corn puree and topped with uni. It’s a snack that comes on strong at first, then to be tapered down with its accompanying tequila-based green verdita cocktail. New on the list: call for the pork vindaloo tacos—where a warm shell holds slow-cooked pork collar, marinated in a heady vindaloo-based sauce. Within, a sweet sour touch of pineapple salsa gives the complete taco the lift it needs. And lastly, whatever you do, make space for Gaggan’s Crab Curry—satisfying yet approachable with an entry-level spice—best enjoyed with a fluffy bed of coconut rice.

The satisfying goodness of a hearty meal unravels through three exclusive specials: the Sichuan Roast Beef Croissant, Sichuan Rojak Chicken Bun and the Kopi Pecan Kouign Amann. The former two comes with a welcome kick of heat—derived from variations of its Sichuan spice blend teamed with generous fillings of beef and chicken respectively. Discover Braci’s delightful new Spring menu
On Saturday night: Finding Braci is half the fun of your weekend adventure. Located on the fifth floor of one of Boat Quay’s iconic shophouses, you’ll be navigating a plethora of seafood restaurants on the ground level before being ushered into Braci’s quiet haven. The one Michelin-starred restaurant, a brilliant collaboration between restaurateur-chef Beppe de Vito and Chef de Cuisine Matteo Ponti, is a 30-seater hideaway complemented with views of the twinkling Singapore River.
Its current Spring menu is a stunning presentation of fresh flavours and produce, as Chef Matteo showcases some of his favourite Italian memories. His Rosso su Rosso is a must-try, a sweet prawn best enjoyed raw and inspired by his childhood holidays by the Ligurian Coast. The Carpione, a North Italian tradition of preserving fried fish in a vinegar and vegetable solution, is also deeply satisfying. Cured kingfish, smoked eel and black radish combination, alongside a carpione jelly—made with smoked eel broth, white vinegar and Amalfi lemon—may sound complex but it comes together beautifully on your tongue. With simplicity at the heart of the main dishes, Chef Matteo’s Linguine in Laguna is a moreish plate that we wish we could have regularly. He employs Monograno Felicetti, a premium pasta from the Dolomite Mountains, and tops it off with hamaguri clams, sea asparagus and borage.

Discover works of Bhutanese art at Patterned Prayer
On Saturday afternoon: In Bhutan, traditional motifs in textiles and architecture reflect nature, culture, identity and heritage. Thought of as sacred by the Bhutanese people, these patterns are imbued with a sense of life. In her first solo exhibition, Bhutanese artist Galek Yangzom reimagines these traditional designs, exploring the presence of the spirit outside the contexts of fabric and architecture. Drawing inspiration from the abundant traditions of Bhutan, she highlights the endless possibilities that can stem from its time-honoured artistic practices.

Have a nightcap at Jungle Ballroom
On Saturday night: At Mondrian Singapore Duxton’s house bar, Jungle Ballroom, your libations take an interesting turn—as Asian mixology intertwines with playful themes. Orchestrated by head bartender Adrian Besa (who has been recognised on the World’s 50 Best Bars list), the tipples here span a wide range, each embodying a distinct ingredient sourced from the region.
Backed by a spirit importing licence which allows access to some of the most interesting and rare finds, the Jungle Ballroom houses the most extensive Southeast Asian spirits collection. All of which, are creatively incorporated in tantalising, colourful cocktails; the Queen of the Jungle presents a unique herbaceous drink, made from rye whiskey, barolo chinato and New Orlean bitters, while a refreshing spritz lies in the form of Rose Hued Waterfall, a sweet and tart blend of bianco vermouth, pomegranate, Yellow Chartreuse and Rosè Pet Nat. If you’re a fan of sour plum, opt for the Phantom Rickshaw, a minty citrus elixir, that riffs off the taste of a mojito, with a special zing from the Asian preserved fruit. The grub here, too, complements the spices found within the drinks—with addictive “Chicken Rice” Crackers paired with chilli romesco as well as smokey, fork-tender cumin lamb ribs, an instant favourite for the night.

Catch Barbie and Oppenheimer
On Sunday afternoon: The cinematic event of the decade has finally arrived. With two of this year’s most anticipated films opening this weekend, what better way to celebrate than with a ‘Barbenheimer’ marathon at the cinema? While social media users have been debating the preferred order to catch the two films in, we recommend starting with Oppenheimer, Christopher Nolan’s biographical thriller based on the life of the physicist who developed the first nuclear weapons. A gripping epic that highlights Nolan’s unparalleled ambition—the director chose to recreate the first nuclear explosion on screen without the use of CGI—the film delves into the implications of the Atomic Age. To keep the mood from getting too bleak, end the afternoon on a lighter note with Barbie. With a spectacular spread of costumes, poppy musical numbers and, of course, a ton of pink, Greta Gerwig’s fantasy-comedy feature is equally as grandiose—but decidedly more fun.
Barbie and Oppenheimer open on 20 July 2023.

Indulge in farm-to-table dining at Open Farm Community
On Sunday night: The greenery that envelopes Open Farm Community is where the magic of the restaurant stems from. Plants line the entrance and crawl up trellises, giving the space a rustic charm. But beyond that, the vegetation makes up the restaurant’s urban farm, from which it collects herbs, spices and vegetables that then go into its newly refreshed menu.
Dishes here make creative use of local and regional ingredients, presenting them in surprising ways and combinations to showcase their potential. The juicy tartness of Heirloom Tomatoes is balanced out by the sweetness of dehydrated strawberries and umami-rich shiso ponzu, while Hay-Smoked Baby Potatoes are tossed in preserved kombu radish—more commonly known to us as cai poh—for a familiar local spin. The tender Grilled Mangalica Pork Collar is a highlight, dusted with black bean powder and paired with charred greens. To accompany your meal, a selection of unique botanical cocktails comes handcrafted with herbs and flowers harvested from the restaurant’s own garden. We recommend the Pandan, a fragrant libation of whiskey, coconut, gula melaka and pandan—indulgently rich and velvety smooth.

Discover Indonesian art at The Neglected Dimension
On Saturday night: “The neglected dimension” is how prominent Indonesian art critic Sanento Yuliman once described the art forms of calligraphy and abstraction—methods that were historically used by artists in the country to reinterpret Islamic traditions and expressions of spirituality. Today’s modern experimentations in calligraphic abstraction mark the return to a form previously marginalised in the region’s modern art history. In The Neglected Dimension, a range of Indonesian Islamic art takes us from the ‘60s to the modern day—tracing the evolution from early Indonesian abstract art to new, contemporary mediums.

Tuck into Yàn’s new à la carte menu with your loved ones
On Sunday afternoon: There’s nothing casual about a Cantonese meal, given the meticulous preparation and labour of love that goes into every dish. At Yàn, you can expect to have a convivial time with your loved ones—all in the spirit of sharing.
In the restaurant’s new à la carte menu, double-boiled soups take precedence. Try the new Double-boiled Collagen Soup with Fish Maw and Conpoy, a rich broth comprising pork bones, mature hen and sustainably-sourced shark cartilage. Loaded with plenty of collagen, this nourishing bowl is flavourful and hearty, with generous amounts of premium ingredients to savour. Adopting a Hakka touch, the poached free-range chicken is another winning dish—first steeped in an ice bath to bring out the meat’s tenderness, then seasoned with a piquant sand ginger paste and stir-fried in peanut oil. There’s also merit to retaining famed signatures here, as is the case of the Wok-fried Live Sri Lankan Crab with Pan-fried Cheong Fun in Chef’s Special Pork Lard Sauce. A visit to Yàn simply wouldn’t be complete without this indulgent dish, dreamed up with the magical char of wok hei.

Indulge in modern Thai restaurant Soi Social’s new seasonal menu
On Saturday night: Chic and vibrant, Soi Social is the place to head to for a weekend hangout with family and friends. Look forward to Thai gastronomy creatively reinvented, from a creamy Thai-spiced chicken and coconut dip served with tapioca crisps, to barramundi fillet in a delectable turmeric coconut soup with roasted chilli oil.
The restaurant’s new seasonal menu shines a spotlight on the Phuket bamboo lobster, prepared in an array of tantalising methods that showcase the immense potential of the ingredient. We recommend the Geang Cha Plu Goong Mang-Gorn, which sees the light sweetness of wok-roasted lobster complemented by an aromatic yellow curry with wild betel leaves—a medley of flavours that makes for a hearty, satisfying dish. Also try the Geang Cua Nue, which consists of Kagoshima A4 wagyu charcoal-grilled to tender, smokey perfection. Doused in rich red curry, it rests upon a bed of eggplant that works wonderfully to cut through the heavier flavours on the plate. To end the meal, the restaurant’s desserts are a veritable treat. For something more familiar, go for the Mango Sticky Rice, served with a refreshing coconut ice cream in place of the usual coconut milk. The Thai Tea-ramisu, meanwhile, is a creative spin on tiramisu that makes use of Thai tea instead of coffee, a must-try for anyone who loves Thai milk tea.

Treat yourself to a sumptuous meal at Path with the launch of its new menus
On Sunday night: As Asian fine dining continues to blaze a trail across our shores, one particular restaurant is quietly working hard to layer tastes and textures for a moreish balance of East Asian flavours. Chef Marvas Ng of Path delivers each dish as a memory—where they are prettily-plated, yet taste wholly comforting and familiar.
His eight-course expedition menu is a thoughtful, experiential journey, in which the Pork Trotter “Crepinette” is one of the rich and playful dishes to look forward to. Presented as a golden sphere surrounded by a dark sauce, Chef Ng digs deep into the nuances of a favourite dish of his—hakka-braised pork belly with preserved vegetables—while utilising a classic French technique where pork is wrapped with caul fat and pan-fried. The Shanghainese Hairy Crab Roe and Oriental “Bouillabaisse” are equally satisfying, the latter an aromatic broth of two different housemade stocks—one of chicken and prawn, and another of fish. You’ll find a silky “moneybag” inside, stuffed with generous slivers of sea cucumber, shrimp, bamboo shoots and Beijing cabbage, a magical pairing we want more of in our life.

Try the White Asparagus, presented in three ways to showcase the versatility of the ingredient: braised, brunoised and, most interestingly, in a delightful ice cream. The unassuming Fennel Salad is another standout, brightened with a passionfruit dressing that provides a refreshing tartness. To end, go for the Black Garlic. The choice of ingredient, while unexpected for a dessert, proves to be perfect as it is incorporated into a crème brûlée, ice cream and caramel base, complemented with smoked chocolate ganache and cocoa nib tuile.

Indulge in modern Italian fare at Altro Zafferano
On Saturday night: Each dish in Altro Zafferano’s new Journey menu tells a story. With thoughtful creativity, the menu takes diners across different parts of Italy, interpreting the rich history and culture of each region through elegant dishes that put a modern spin on traditional flavours.
Fishermen Perks, for example, embodies the respite that Italian fishermen find after a long day in the simple dish they enjoy by the shore—fresh sea urchin with bread and olive oil. Altro Zafferano’s rendition features a luscious sea urchin flan topped with fresh sea urchin, extra virgin olive oil and charcoal-grilled bread cream. Scoop it up with the house-baked sourdough that is served on the side, and you’ll find a wonderfully satisfying bite. Meanwhile, Friday’s Sole comes inspired by the country’s devotion to Catholicism. With Friday’s abstinence from meat products a habitual part of life for Italians, the dish presents tender sole fillet with a savoury trout roe caper mugnaia sauce and white asparagus. To end the night, the Ancient Panna Cotta features velvety Stracchino cheese custard and fresh Japanese strawberries. Topped with pistachio tulle and 100-year-old Balsamico, the unique dessert brings an exquisite meal to a close on a sweet note.

Visit a trio of diverse art exhibitions at the Singapore Art Museum
On Saturday night: For the first time, the Singapore Art Museum (SAM) is launching three exhibitions at once—and they’re a versatile exploration of a myriad of societal issues. Factory of the Sun by internationally renowned German filmmaker Hito Steyerl was first shown in 2015, yet the commentary and predictions Steyerl makes remain ever-relevant today. Watching the assemblage of news footage, dance clips, and gameplay content from a comfortable beach chair is an experience not unlike the flurry of TikTok dance trends, reports of global unrest and general chaos we witness online every day. Jane Lee’s Lila: Unending Play will have viewers considering how we define a ‘painting’. By deconstructing the basic materials every artist employs, Lee turns the room itself into a canvas. Finally, SAM invites local artists to take a long, hard look at our past, present and future. Expect to learn something new about Singapore’s history from works by Anthony Chin, Khairulddin Wahab and more, in SAM Contemporaries: Residues & Remixes.

Dive into a local zine reimagining a sustainable future for fashion
On Sunday night: This year marks the tenth anniversary of the Rana Plaza factory building collapse in Bangladesh, which led to 1,100 deaths and 2,500 injuries—making it the fourth largest industrial disaster in history. This entirely preventable tragedy was the trigger for the formation of global advocacy movement Fashion Revolution, which campaigns for a clean, fair and accountable fashion industry through research, education and pushing for policy change. This year, Fashion Revolution’s Singaporean chapter has released an original zine entitled Manifesto, available online and free of charge. With 10 entries from regional organisers, writers and creatives spanning essays, crochet poems and outfit journals, the project covers a wide range of topics in and around the world of sustainable fashion, ultimately weaving together a love letter to a reimagined fashion future—one that measures success by more than profit, and more importantly, celebrates life.

Sip on refreshing cocktails at the Hendrick’s Wildflower Garden pop-up
On Saturday afternoon: The latest limited release from Hendrick’s Gin greets diners with the alluring aroma of fresh blossoms. As part of the brand’s revered Cabinet of Curiosities series, the Hendrick’s Flora Adora adds a floral dimension to the distillery’s signature house style with lush and sweet botanicals. In line with the new release, a pop-up at Caffe Fernet invites all to discover the enticing spirit with a selection of Hendrick’s Flora Adora cocktails and pairing dishes.
The aperitivo-inspired Hummingbird is bittersweet and refreshing, while the Butterflies & Bees puts a fruity spin on the classic Gin Sour. Meanwhile, the delightfully sweet Blossom is infused with sakura tea, peach and sparkling strawberry wine. For a winning meal, pair your libation of choice with a delectable spread of dishes from Caffe Fernet’s new menu refresh. The Burrata is a highlight, served with macerated strawberries and cherry tomatoes, a drizzle of citrus-balsamic sauce and topped with pine nut granola for a delicious crunch. Indulge in a dessert-led evening at Le Matin Patisserie
On Saturday night: For anyone with a sweet tooth, Le Matin Patisserie’s latest delight will prove to be the ultimate indulgence—the Croissant Amazake Soft Serve. Made with sustainability in mind, the soft serve is whipped up using the fermentation process used to make Japanese amazake, where the natural sweetness of glucose—in this case, croissant and pastry trimmings—is extracted for concoction. The dessert patisserie offers four different ways to enjoy the soft serve, from a punchy pairing with affogato or in the flaky-soft package of a croissant cone. But the star of the evening might be the Croissant Amazake With Brown Butter Waffles. A true melt-in-your-mouth experience, the swirling soft serve forms a wonderful combination with the buttery crunch of the golden brown waffles, served hot.

Indulge in Michelin-starred Marguerite’s new winter menu
On Saturday night: Within a year of opening its doors in Gardens by the Bay, contemporary fine-dining restaurant Marguerite has already earned its first Michelin star. This season, chef-patron Michael Wilson is introducing a refreshed menu inspired by a European winter. Featuring seven courses, expect an exquisite culinary journey bursting with impressive flavour. In this new iteration of Marguerite’s offerings, the element that shines through the strongest is Wilson’s mastery of texture.
To start, one particularly memorable canape showcases the different parts of Mallard duck. Named Duck, Duck, Duck, Cherry, it sees a duck fat financier layered with duck liver parfait, cherry fruit gel and a sliver of cured and dry-aged duck breast—then topped with a stretchy and chewy sour cherry veil for a dose of whimsy. Meanwhile, a silky Roscoff Onion Custard envelopes wood-grilled Scottish diver scallops. The stunning main course arrives in the form of dry aged St Peter’s Fish, plated alongside a side of heart of palm. For dessert, Wilson presents a truly picturesque plate modelled after a wild forest floor. A creamy and savoury Jerusalem Artichoke gelato sits on a bed of cocoa and coffee soil. To finish his masterpiece, Wilson adds chocolate twigs, a drizzle of 20-year aged balsamic vinegar, coffee oil and—for a final flourish—a crown of pumpkin maple leaf crisps.

Rirkrit Tiravanija
Explore an exhibition by acclaimed artist Rirkrit Tiravanija
On Sunday afternoon: The starting point for We Don’t Recognise What We Don’t See was Charles Darwin’s tree of life. Designed to provoke a visceral response by engaging the mind and senses with a series of 40 artworks, the exhibition speculates on a reality where extinction looms over the lives of the multispecies world we live in.

Tuck into modern Japanese-Korean cuisine at Akira Back
On Friday night: Reinvention and play have always been key markers of a good time at Akira Back, the namesake restaurant of celebrity chef Akira Back. Combining heritage with experimental cooking, Akira Back’s modern take on Japanese cuisine is boldly inflected with distinct Korean influences—most notably seen in a refreshed menu presented by head chef Chanik Chang. For starters, keep it light and dig into a sharing plate of the tantalising AB Tuna Pizza doused with umami aioli and truffle oil. For a hit of sour and spice, try the Salmon Tataki that is brightened by a karashi mustard and miso dressing. Meat lovers will take to the Pork Belly (Bossam)—that borrows from the Korean tradition of wrapping meat in fresh lettuce—or the scrumptious AB Wagyu Tacos. Be sure to leave space for dessert as the AB Cigar is not one to be missed. Combining a decadent coffee mousse with macadamia praline and almond dacquoise, this rich, smoky finale will only leave more to be desired.

Enjoy happy hour at modern seafood restaurant Humpback
On Saturday night: Set in a 1930s conservation shophouse in Bukit Pasoh, seafood restaurant and wine bar Humpback has undergone a revamp eight years after its initial launch. Once a raucous hangout lined with bar seats, the new face of the restaurant is elegant and minimalistic, with soft pendant lights hanging low over marble tabletops, paired with calming sage green upholstery. The food has been elevated accordingly—expect a menu focused on clean flavours and fresh ingredients, anchored by confident European culinary technique and lifted by Japanese influence.
Start your meal with the restaurant’s signature oysters. Shucked minutes before they reach your table, these oysters are seasonal and hand-picked from a farm in Washington. Our current favourite on the menu is Hama Hama, a plump, impossibly clean-tasting oyster with a juicy bite. Amidst the small plates, a sweet red prawn tartare stands out, enlivened by a light tosazu jelly and pomelo for texture. Elsewhere, savoury purple clams are dressed in a funky toasted koji (rice yeast) sauce—moreish and comforting. If you like the intense savouriness of swordfish, the Ricotta Cavatelli with Swordfish Bacon and Chitose Corn might be one of the best seafood pasta dishes in town. Sinfully creamy and full of umami flavour, it’ll go down easy with our favourite bottle of wine from the carefully curated list at Humpback: the Domaine Bachelet-Monnot Chardonnay 2020—delicate, acidic and infused with a hint of lemon for perfect pairing with seafood.

Try a refreshed omakase experience at Fat Cow
On Saturday night: Loyal fans of Fat Cow would know the restaurant takes its beef offerings very seriously—their decadent wagyu donburi and wagyu sandwiches are winners across our island. Their Chef’s Table omakase programme, on the other hand, is their best-kept secret, and Chef Shingo Iijima has revamped it to focus on seasonality and kaiseki elements. Wagyu is the core ingredient in a stellar line-up of dishes, as is balance, which Iijima achieves through a variance of ‘light-heavy-light-heavy’ dishes as he moves into stronger flavours with each cycle.
The Wagyu Yuba To Kakabu No Taitan, a simmered turnip and Miyazaki A4 wagyu concoction, is light on the palate as the meat melts in your mouth, while the Kaga Renkon Mochi Ikomi Wagyu—a lotus root glutinous cake with wagyu beef filling—is crisp, chewy and deep-fried to perfection. The sushi course is wonderfully fresh, served at exact temperatures. Don’t leave without trying Iijima’s dessert course, a baked Japanese sweet potato, which is steamed, passed through a sieve and mixed with butter, cream and wasanbon, before it is shaped and baked. The result is sweet, homely flavours, served with vanilla ice cream and gloriously fresh strawberries, that will transport you to an idyllic Japanese countryside.

On Saturday night: If you enjoy Thai cuisine but don’t have a high tolerance for spice, you might be a fan of Sarai, a new casual fine-dining restaurant putting a subtler spin on flavours from Thailand. Hidden away in Tanglin Mall, the restaurant spotlights traditional ingredients through elegantly plated dishes. Each dish is distinctively light—from the grilled Australian wagyu sirloin topped with an aromatic panang curry sauce to a buttery piece of cod enveloped in an addictively-tangy chilli lime garlic sauce. The unlikely hero of the meal is Tom Klong Pla. In place of the ubiquitous hot and sour Tom Yum, this Thai soup served at Sarai is lesser known but immeasurably complex in flavour, made from smoked dry fish and an array of herbs. Celebrate meaningful works of theatre at Singapore Fringe Festival
On Sunday night: This year’s Singapore Fringe Festival does not have a curatorial theme. Instead, organisers invited artists to share what they were concerned about within their own communities—resulting in an insightful line-up that opens up discussions about the growing divide between the privileged and the marginalised, and what we can do to create a more hopeful future. Our pick from the list is Foreign Bodies. Created and performed by Birds Migrant Theatre—a theatre group consisting of migrant workers from Indonesia, Bangladesh and the Philippines—and directed by Haresh Sharma and Serena Ho, the play tackles some of the challenges that migrant workers go through in Singapore. For other options to consider, look to Django in Pain, a digital production that explores depression, creativity and love through tabletop puppetry—or Kafka’s Ape, a hard-hitting performance that provides a metaphorical perspective on the intricacies of identity in a post-apartheid South Africa.

It’s no surprise, then, that their new single is following suit. Titled OMG, the track is catchy but laid-back, complemented by bright vocals that attest to the quintet’s youthful energy. With a music video that comes accompanied by three different performance versions, the new single undoubtedly cements the group as one to watch out for this year.

Explore the history behind book destruction at the ArtScience Museum
On Saturday afternoon: Delving into the history of book destruction and its impact on the future of knowledge, Pulp III: A Short Biography of the Banished Book is part of artist Shubigi Rao’s decade-long project exploring the subject. Five years in the making, the exhibition marks the midpoint in Rao’s ten-year undertaking. Presented as part of Singapore Art Week, the current showing follows a successful seven-month run at the 59th International Art Exhibition of La Biennale di Venezia. Catch daily screenings of Rao’s film, Talking Leaves, and pick up a copy of her book, Pulp Vol. III—housed in an abstract studiolo. With the display of books changing over the course of the exhibition as copies are dispersed, the installation serves as a reminder that each book is a messenger and a call to action.
Pulp III: A Short Biography of the Banished Book runs from 6 to 24 January 2023.
